A year after Erin MacGregor was crowned Miss Colorado and had competed in the Miss America Pageant, she met Joseph (Joe) Beauprez. Though they'd both attended the University of Colorado and had several friends in common, somehow it took until several years after they had graduated to meet. Luckily, there was still more excitement to come, and when Erin competed for the title of Miss USA, Joe was right there beside her. As he jumped up and down cheering for her, I knew he was a keeper, Erin says. It wasn’t too long afterward that Joe asked Erin to marry him while the two vacationed in Breckenridge. Early in the decision-making, Erin and Joe decided to keep things small, inviting just 20 guests. We wanted our guests to feel pampered and relaxed. Excellent food, delicious wine, and personalized favors were our top priorities, Erin says. The couple planned a wedding that would take place in three separate spots, each with its own palette and theme.
