Trio of White Italian Cannoli Wedding Cakes with Ricotta Filling

In keeping with the traditional Italian wedding theme (especially since the couple first met on a dating website for Italian singles), Maxine and Cosimo had a trio of white wedding cakes inspired by cannoli. They were filled with ricotta cream, roasted almond shavings, and pieces of candied oranges for a small burst of flavor.
