Sarah and Peter's Gluten-Free Pancake Alternative to Wedding Cake

Since Sarah is gluten intolerant, the couple forgoed the traditional wedding cake for a brunch-appropriate stack of gluten-free pancakes. Guests, however, still had plenty to choose from at a tremendous buffet of cakes, pies, cookies, and brownies.
