I am definitely a cake girl, so choosing the flavors was really fun for us,β says Nikki. βThe main cake was a hazelnut Sponge cake soaked in Pisa syrup, filled with espresso mousse, caramel mousse, chocolate mousse and chocolate ganache. Two of the smaller cakes had poppy seed sponge cake soaked in vanilla bean syrup, filled with kalamansi mousse, mandarin orange mousse, and mandarin orange curd. The remaining two cakes had white cake filled with raspberry mousse, blood orange mousse, cassis mousse, and raspberry compote.β
