Laura and Jacob met one summer at the local ice cream shop Laura worked at during college. Jacob was a regular and after several weeks of frequenting the spot, he finally worked up the nerve to ask Laura on a date. “Our first date lasted till 3 o’clock in the morning and we never ran out of things to talk about,” says Laura. “After a few months of dating he confessed to me that he really didn’t like ice cream!” A year later, Jacob surprised Laura on her mother-daughter trip to New York City, popping the question in front of the giant Christmas tree in Rockefeller Center. “Knowing New York City was one of my favorite places, Jacob had planned the engagement in three days making what he and my Mom called ‘Operation Christmas Tree’ a success,” says Laura.
