A Rustic, Western Wedding at a Private Residence in Las Cruces, New Mexico
Katy Rosencrans (22 and a veterinary student) and Charles Roybal (23 and a horse farm manager) met during their undergraduate years while Charles was taking the colt breaking and training class at the horse farm and Katy was on the ranch horse riding team for practice. It all started with the occasional “Hey, how’s your horse doing?” as the two got to know each other while riding horses, which they both had a passion for. Not long after they started dating, Charles picked out an engagement ring. While Katy was visiting Charles in California while he was doing an externship with a cow horse trainer, the two took the opportunity to visit Redondo Beach together where Charles got down on one knee. The couple decided to have their wedding in Las Cruces, since it is a great location for all of their family and friends and they love the city. They wanted a Catholic wedding so they chose to have the ceremony at Immaculate Heart of Mary Cathedral, followed by a reception at Katy’s parents’ house amongst the pecan trees in the orchard. The wedding was western themed with a rustic atmosphere, accented by a burgundy and brown color palette. The couple and their families created the majority of the decorations themselves with their background and history as inspiration. Katy and Charles’ brand was incorporated in the table centerpieces and other decor, and there was a playground and roping dummies to keep the youngsters entertained. Near their guest book, they included a box for guests to share their favorite recipes for the couple to have as they started their life together. Lastly, since Katy’s family grows pecans and the reception took place in an orchard, the couple gave each of their guests a bundle of home grown pecans.
