Katie Mallet (28 and a teacher) and Erik Olsen (35 and a fisherman) were matched on an online dating site and while the two would talk on and off, it wasn’t until they both spotted each other out at a local bar one night that they decided to give a date a try. They hit it off and after a few months together; Katie took the plunge and moved in with Erik. A year-and-a-half later, Erik proposed on a trip to Myrtle Beach on the top of a Ferris wheel. “He had them stop at the top. Then he got down on one knee and asked me. It was perfect,” says Katie. For their wedding, the couple planned a garden-inspired affair at the Jack Baker Sunset Ballroom in Toms River, NJ. A pale pink, white and gold color palette was key in setting the wedding’s romantic tone, while details like birdcage centerpieces with cascading ivy and blush blooms brought Katie and Erik’s vision to life. While the decor was all elegant, romance, the couple made sure to fill the day with playful touches like a knot tying tradition during the ceremony, festive ribbons wands, a confetti-filled reception entrance, a photo scavenger hunt and a photo booth stocked with silly props.
